I made this for dinner on Monday. It's a zucchini casserole. It was good, but it could use some improvements. My mom said it would be better with cheddar cheese baked on top. I thought that it would be good if I had used cornmeal in place of baking mix. Next time I make it I will implement these changes and see how it compares. Since I found the recipe online, I will share it with you.
| Zucchini Casserole
Ingredients: • 4 cups grated zucchini, squeezed dry with a towel • 1 1/4 cups Heart Smart Bisquick baking mix • 1/3 cup minced onion • 3 large egg whites, beaten • 1 large egg, beaten • 1 tbsp olive oil • 1/4 cup grated parmesan cheese • 1 tsp kosher salt and fresh black pepper to taste • 1 tsp parsley
Directions: 1. Preheat oven to 325°F. 2. Mix everything together in a bowl. 3. Spray 9 x 13-inch baking dish with cooking spray and pour mixture. 4. Bake until golden brown and a toothpick inserted in the center comes out clean, approximately 45 to 50 minutes. 5. Cut into 12 equal pieces. |
The recipe presumably calls for green zucchini, but I used a mixture of yellow zucchini and yellow squash. I also used about a teaspoon of minced garlic. I also didn't bake it in a 9 x 13-inch pan. I used either an 8 x 8-inch or 9 x 9-inch pan; the different pan size required a longer bake time which was 60 minutes.

Hello! Anyone knows a recipe on a bread without yeast and gluten and technically everything else that you can be allergic to?
It's a common problem but i can't see to find any good ones.. and i really want to be helping someone who only can eat lettuce.

There are other things that make bread rise beside bakers yeast. Baking soda is one but, making a decent tasting bread with it might be impossible with the set of ingredients required for gluten free bread. If you google the phrase gluten free unleavened bread recipe you will probably find recipes for some flat breads that will be similar to tortillas, pitas or even communion wafers. There are some methods that involve making a starter dough, that don't involve bakers yeast. Sour dough bread is the only one I can think of right now. However, it's a relatively complicated process that requires culturing an assortment of bacteria that work the same way as bakers yeast. Bakers yeast is just one specific bacteria. You might do a search on salt bread. I don't know if there is a way to make it gluten free. Also, it might involve other ingredients your friend cannot tolerate. Your friends diet might be very restricted but, it's hard to believe lettuce alone can sustain life. You will probably have to find out what other things they can eat. There has to be something. Good luck and let me know if you were able to find anything useful.
