I like spicy. I especially love Cajun. I especially like the way Cajun flavorings work with Chicken and seafood. I love "blackened", well, almost anything. When I blacken almost anything, I have to cover my smoke detectors. It's a process. I've never tasted an "off the shelf" Cajun spice I didn't like. However, I had a decided preference. For many years, I used a brand sold by a local store. That store went out of business and I couldn't get it anymore. Based on my desire to replicate a dish, from a local restaurant, I have formulated my own blend of Cajun spices. I use so much of it, I only make it ever two years. This recipe is available, on request. lol EDIT: I forgot to mention, tonight I will have Cajun shrimp stir fry. Shrimp, my favorite veggies, Lo Mein noodles, with my Cajun spice combo.

Uncle Bob's Cajun Combo 1/2 cup/120 ml paprika 1/3 cup/80 ml Kosher (coarse) salt 1/4 cup/60 ml black pepper, coarsely ground (doesn't have to be coarsely ground) 3 tablespoons/45 ml basil, dried 3 tablespoons/45 ml garlic powder 2 tablespoons/30 ml onion powder 2 tablespoons/30 ml oregano, dried 2 tablespoons/30 ml cayenne pepper 2 tablespoons/30 ml white pepper 2 tablespoons/30 ml thyme leaf, dried If the thyme is powdered, reduce this amount by one third. The result is moderately spicy. Adjust the amount of cayenne pepper up or down, for the desired level of heat. I buy my spices online, in bulk. When I make this, I multiply this recipe by 12. Lasts me about two years.

Vegetarian (and vegan) red onion and rosemary sausages, chips, mixed vegetables, chicken gravy and mint sauce. Just using up some chicken gravy granules I bought before I turned vegetarian last year.
